Happy Friday

It’s been windy and rainy in my neck of the woods; weather like this always reminds me of good comfort food, like mac & cheese. Here’s a slightly different take that’s bite-size and savory, but don’t be fooled by its cuteness. It packs a power of flavor when you use good prosciutto and cheese (I like Grafton cheddar). I was perusing CHOW.com for menu ideas and found this scrumptious recipe, Prosciutto-Wrapped Macaroni and Cheese Cups. It so simple and often times simple is best. If you’re observing Lent, make tomorrow. Making this recipe without “meat” to hold the mac & cheese is underwhelming.  If you’re celebrating St. Patrick’s Day, pair it with a bright green salad. That should do the trick. Have a good weekend and, to my fellow neighbors, stay dry!
