As I mentioned earlier, Aida Mollenkamp’s Salmon, Crème Fraîche, and Fennel Rillettes was on my list for Oscar snacks. Well I made it, we ate most, shared some with neighbors, and, hands down, it’s a new favorite. I really liked the surprise aromatics of the tarragon and fennel mixed with the salmon. We served it with very plain crackers but am going to try it with a nice rye next time. Enjoy your Monday!
