In lieu of enjoying a jar of Boxing Day Chutney today, I made mince pies with tangy almond and orange mincemeat. I have a very simple recipe that starts with Martha Stewart’s Pate Brisee (which I use for all pies). Using 2 different size cookie cutter rounds, I cut the tops and bottoms for the pies and place the larger rounds in a mini muffin pan. Use an egg wash inside each crust then fill with 1 teaspoon of mincemeat. Place the smaller top crust on with a little more egg wash, and bake at 350 degrees for 20-25 minutes. Once cooled, I like to sprinkle sugar on top for extra goodness. Happy Boxing Day!
